“As the hills of statistics go up, up, up on soil erosion, climate change, fossil fuel use, chemical contamination and more it becomes increasingly obvious that we will need the good examples from such places as Sustainable Settings as a hedge on our cultural bet. Oh, by the way, they produce better quality food.”

A Turn-Key Agricultural Operation

• Working A2-A2 raw dairy with 120 family cow share members

• Vetted by Whole Foods for our Biodynamic produce

 • Vegetable CSA share program

• Chef collaborations

• Restaurant accounts from Aspen to Glenwood Springs

• Featured produce in small, local groceries

• Selling our medicinal botanicals to local and regional apothecaries and healers

In Sustainable Settings’ 24 years of operating on Colorado’s Western Slope it has gained national attention for its model of stewardship and promotion of local food security, stimulating awareness of the benefits of local and beyond organic farming. To drive this mission Sustainable Settings established micro-enterprises and niche markets featuring our premium Beyond Organic/Biodynamic foods and herbal medicinals. Our heritage meats, heirloom vegetables, A2-A2 dairy and botanical herb products are “untouchable, possessing a genuine terroir” according to Chef Barclay Dodge of BOSQ restaurant in Aspen. Apothecaries and healers within a 200 mile radius value our medicinal herbs, which have 2 to 3 times the potency of other commercially available herbs.

This working ranch has developed markets for all its products from our vegetable CSA, restaurant accounts and on-site sales in the ranch store, to stocking Whole Foods and local grocer’s shelves. These venues offer our Biodynamic beef, lamb, pork, chicken, turkey, eggs, vegetables, and medicinal herbs. We have a loyal following thanks to our local customer base and the finer chefs in the region, which turns into memorable on-ranch and in-restaurant culinary collaborations.

Since 2004 Sustainable Settings has been a leader in Farm to Table events and has opened the ranch to corporate retreats and think tank events. Annually we celebrate the bounty of harvest with the now legendary Harvest Festival featuring a speaker’s series composed of movers and shakers in the health and wellness, regenerative farming, and local food movements. These memorable events create unforgettable seasonal celebrations, give our stewardship research national attention and drive sales.
